Menu plan–April Week 4

Still working on getting back in the groove of menu planning.  I got a new cookbook over the weekend that has inspired me–Gooseberry Patch–Ready, Set, Eat.  The best part is, if I get lazy one week, there are several menu plans with shopping lists ready to go!!  🙂  But, I didn’t cheat this week:

  • Sunday–Scrambled Eggs with sausage and Razzle Dazzle Raspberry Muffins (the first recipe I’ve ever posted!!)
  • Monday–Sweet-and-Sour Hot Dogs (new to us, from my new cookbook)
  • TuesdayChicken and Corn Chilaquiles Casserole (new to us, found last week browsing through other Menu Plan Monday blogs)
  • Wednesday–Grilled Cheese Sandwiches
  • Thursday–Sloppy Joes
  • FridayHomemade Frozen Pizzas (I’m going to try to start stocking my freezer a bit at a time)
  • Saturday–Leftovers

  1. When did your blog get a pretty redesign?! I’m so used to viewing in a reader I haven’t noticed! Maybe you can help me with the budget-friendly meals thing. Mint.com tells me I’ve already spent $451 on groceries this month…and there are only two of us…and we still have one shopping trip to go. Big fat budget fail! (Of course, South Beach isn’t helping. It works, but SB-approved food ain’t cheap, that’s for sure.)

    • I changed the theme last night. While I usually feel kinda beige, like my previous theme, this better reflects how I would like other people to see me. 🙂 I also like this theme a lot better because it has a couple of “seasonal” options, so I can tweak it without totally changing it.

      I don’t know what to tell you about budget with South Beach. Part of how I keep our budget in check is to eat meatless at least once, if not twice, a week because meat is usually the highest priced item on my grocery list. But, if Ross won’t eat beans and you can’t stretch your meal with starches, like I do, I’m not sure what to tell you. 😦 I’ll keep thinking about it.

    • Mardel had a couple of GBP cookbooks for less than $10, so I couldn’t resist. The hot dog recipe intrigued me too. If the sauce is good, I may try it next time with chicken instead.
